Vaniglia Cotechino, also known as Sopraffino, is a traditional Lombard pork speciality made from finely minced pork and pork rind, carefully blended with pork fat to achieve its distinctive smooth texture and delicate flavour.
Depending on the natural casing used, it is produced in different traditional varieties, including Prealpino Nostrano and Boccia Prealpina.
Despite its name, Vaniglia Cotechino contains no vanilla. The name is believed to refer to its exceptional tenderness and mild, refined flavour, reminiscent of the delicate aroma traditionally associated with vanilla.
With noble origins, Vaniglia Cotechino is said to have been appreciated at the Habsburg court during the period when Northern Italy was part of the Austro-Hungarian Empire. Prepared using carefully selected pork and crafted with meticulous attention, it was considered a more refined alternative to traditional cotechino and was traditionally served on prestigious occasions.
