Farmer’s Flat Pancetta, also known as “Steccata Stagionata”, is made from carefully selected Italian pork belly. After resting in brine and being carefully massaged, it is slowly cured in dedicated ageing rooms. With its delicate and well-balanced flavour, it is an essential addition to any traditional Italian antipasto platter.
In the steccata version, the pancetta is pressed between wooden slats, traditionally made from woods such as chestnut or birch. This process helps it maintain a compact shape during curing, giving the product its distinctive texture and flavour.
According to tradition, the technique of pressing pancetta between wooden slats was originally used to make it easier to transport and preserve, keeping it compact and better protected from changes in climate during fairs and markets. Today, this traditional method remains a symbol of artisan craftsmanship and product authenticity.
